First of I'm so sorry you're struggling with coping with increasing you intake, I know exactly how frustrating it is to not see the scale move at all despite eating incredibly low, then trying everything and just feeling punished for it instead :'c. My heart goes out to you <3.
With that said I though I could share some knowledge just in case it might help ease the anxiety just a little bit. Of course, your intake is way too low to actually gain any fat on, even with increasing it it's below whatever BMR value even a long term ED sufferer could possible have. But I think this is something you already know lol and I know I personally hate hearing "just be patient" when it's been forever without progress haha.
Also disclaimer I am by no means an expert on this subject hah'', so keep that in mind ~
My guess would be that the reason you're feeling "squishier" is due to two reasons.
1. 1g of carbs hold 3-4 grams of water. Naturally a higher intake would result in more carbs, which would mean more water.
2. Increasing calories, even in a deficit, means sometimes an increased amount of glucose stored as glycogen in the body. It's not always the case but if the body doesn't need all the calories then and there when you consume them it wil be stored as glycogen in your muscles. This effect isn't as prominent when you have a low caloric intake compared to a normal person due to you know, not much glucose exists to be stored as glycogen. With that said it can still happen and glycogen ALWAYS produce water in the body when it's created. It's a chemical reaction.
Now of course, food weight can also increase a sense of bloat but I know that "squishy" seldom means bloat in ED language haha. Also, If you're consuming more food naturally more sodium will come with it (depends on what you eat exactly though, but sodium exists in a lot of things even if it's just small amounts). and sodium needs to be in balance with your water levels in your body, which is why we get thirsty after eating salty things and look puffy after eating a meal with a lot of salt.
The conclusion here is: I'm pretty sure the squishy feeling you're sensing is water, which can feel awfully similar to fat when you try to check it on your body lol. Honestly there is no good visual way to distinguish the two from each other, the best way is to just analyze how you have eaten lately and determine what it could be. Again as others have said, you are certainly not eating enough calories to make your body want to store it as fat, and with a small increase in intake I'm pretty sure it's simply water weight you're feeling.
Just also wanna throw in there that I don't want to encourage you to lower your intake again with this information, eating below 1000 kcal will make you lose fat no matter. But if the water weight is making it hard for you to cope mentally on a day to day basis, I'd suggest maybe trying to prioritize protein + fat and less carbs, as well as avoiding things that are too salty? Carbs and sodium are great and necessary so I don't want to scare you off of them haha, but it might be a thing worth trying so yo can keep your caloric intake a little higher, but experience less squishiness due to water <3

Finally lost the first 0.5 lb. It's a very slow loss but if I kept up that pace I would at least still be a grape at the end of this, lol. Here's hoping that the trend continues tomorrow! (I also wouldn't say to losing even more either... hint, hint...)
